Sweet Potato, Maple & Pecan Tarts Recipe
Whenever I come across a great recipe, I have to pass it along to all my friends. Now that I have this blog, I get to share it with the world. My mom is a great newspaper clipper, and she came across this recipe back in January. Only recently did she actually make it and ask me to try it.
Sweet Potato Pecan Tart? Didn’t sound very good to me, and really it didn’t look that good at first either. I am SURE glad I tried it, because after that first bite, I was sold! These Sweet Potato Maple Pecan Tarts are AWESOME. If you are a fan of pumpkin pie or sweet potatoes, you will LOVE these tarts.
The recipe came from the January 22 -2007 edition of The Province Newspaper. From the LiveIT, Food, Fashion, Fitness, Trends section. That is all the information I could gather off the newspaper clipping I stole from my mom.
To describe the flavour, I would say these tarts have the same texture as a pumpkin pie, but not the full, spice flavour of pumpkin pie. The sweet potato maple pecan tarts, have tasteful hints of maple and the soft crunch of the pecans with the smooth whipped texture of the sweet potato make tart will make a sure winner in any family. They will disappear quickly as people will devour them, so make lots and make often. ENJOY!
Recipe as per the paper:
1-Medium Sweet Potato (about 12 oz)
2-Tbsps, butter melted
2-Eggs
1-Cup Maple Syrup
1/2-tsp Vanilla
Pinch salt
24 frozen tart shells (3inch size) thawed
1/2-cup toasted pecans
-Scrub sweet potato and trim ends, pierce with knife in several places, microwave on high 6-8min or until tender, turning over halfway through
-cool enough to touch, and remove skin, mash with fork until smooth, measure 1 cup and put in bowl
-Whisk in butter, eggs, maple syrup, vanilla, and salt until smooth
-bake tart shells on baking sheet in 375 degree Fahrenheit for 5 minutes and remove from oven
-sprinkle in pecans among partially baked shells, gently pushing down any puffed up pastry
-divide sweet potato mix among shells
-bake 20-24 minutes until filling is slightly puffed, almost set and pastry is lightly golden.
-let cool on rack
